Jester King is an authentic farmhouse brewery committed to making wild ales and spontaneously fermented beers that reflect the unique character of our location in the beautiful Texas Hill Country. Like the small farmhouse breweries that inspired us, we pursue beer making that involves time, patience, unique fermentation, full attenuation, and refermentation in the serving vessel. We use water from our well, locally grown and malted grains, and native wild yeast to make beer with a sense of place unique to our brewery.

We’re excited to introduce Multifarious, our collaboration with 18th Street Brewery in Hammond, Indiana! For Multifarious, we sought to achieve complex results through a very simple process. We took the classic, comforting texture and aroma of oatmeal stout, added a different dimension with smoked malt, and let it slowly evolve through mixed culture fermentation with native yeast and bacteria. It was brewed with the mindset of creating a beer that is subtle, succinct, and above all — drinkable. It’s no secret at this point that we’ve been intrigued for quite some time now with subtlety, simplicity, and restraint. We often measure our work by asking the question, “Would we want to drink a full glass of this beer, and then ask for another?” In working with 18th Street Brewery on Multifarious, we feel we were able to achieve this!

On brewday, Texas wildflower honey was added from Good Flow Honey Co. in Austin, Texas late in the boil. After the first several weeks of fermentation, more honey was added to the beer. Finally, the beer was 100% naturally refermented in bottles, kegs, and casks using more of the raw, Texas wildflower honey. In addition to the honey, Bière de Miel was brewed with Hill Country well water, malted barley, malted wheat, and hops.

2015 Hibernal Dichotomous was brewed in late December 2014 with Hill Country well water, malted barley, flaked oats, beets, hops, orange juice, orange zest, and thyme. It is a different recipe from 2014 Hibernal, which was a blend of pressed watermelon juice, young farmhouse ale, and mature barrel-aged beer brewed with rosemary, lavender, and spearmint. For this winter’s beer, we wanted the ingredients to reflect the flavors of winter in Texas using quintessential Texas winter produce. Peeled and grated raw beets from Johnson’s Backyard Garden were added to the mash, and orange juice and zest from G and S Groves and fresh thyme from Pure Luck Farm were added to the whirlpool. It was then fermented in stainless steel with our unique mixed culture of microorganisms consisting of brewers yeast and native yeast and bacteria harvested from the air and wildflowers around our brewery in the Texas Hill Country. About six weeks into the fermentation, we added more peeled and grated raw beets, orange juice, and orange zest. Finally, the beer was naturally carbonated by refermentation in bottles, kegs, and casks. Mixed culture fermentation is a very slow and patient process, so while Hibernal Dichotomous is evocative of the winter, its release comes in the spring. Hibernal Dichotomous is 4.9% alcohol by volume, 29 IBU, has a finishing gravity of 1.002, and was 3.5 pH at the time of bottling.

Working with Crooked Stave Artisan Beer Project (Denver, CO) and Brasserie Trois Dames (Ste. Croix, Switzerland) gave us the opportunity to explore how wort brewed from the same recipe would express itself through fermentation with each brewery’s unique mixed culture. Over months of patient fermentation in Spanish Sherry casks, the idiosyncrasies of our respective microorganisms began to unfold. Unfiltered, unpasteurized, and 100% bottle conditioned.
